  • 2 cups cooked jasmine rice (preferably cold, leftover rice)
  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • Cooking oil for frying


  1. Prepare the Ingredients:
    • Ensure the rice is cooked and cooled. If possible, use leftover rice from the previous day.
    • Peel and devein the shrimp.
    • Chop the green onions and mince the garlic.
  2. Cook the Shrimp:
    • Heat a large skillet or wok over medium-high heat.
    • Add a small amount of oil to the pan.
    • Stir-fry the shrimp until they turn pink and opaque. Remove them from the pan and set aside.
  3. Scramble the Eggs:
    • In the same pan, add a bit more oil if needed.
    • Pour in the beaten eggs and scramble them until just cooked. Remove from the pan and set aside.
  4. Stir-Fry Vegetables:
    • Add a bit more oil to the pan.
    • Stir-fry the minced garlic until fragrant.
    • Add the mixed vegetables and cook until they are tender.
  5. Combine Ingredients:
    • Add the cold, cooked rice to the pan, breaking up any clumps.
    • Pour in the soy sauce, oyster sauce, and sesame oil. Stir to combine.
    • Add the cooked shrimp and scrambled eggs back to the pan.
  6. Season and Finish:
    • Season the fried rice with white pepper and toss everything together.
    • Add the chopped green onions and continue to stir-fry for a couple of minutes.
    • Taste and adjust the seasoning if needed.
  7. Serve:
    • Once everything is well combined and heated through, remove from heat.
