Ingredients:
- 2 cups cooked rice (preferably day-old and chilled)
- 200g beef (flank steak or sirloin), thinly sliced
- 1 onion, finely chopped
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce (optional)
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions:
- Prepare the Rice:
- If using freshly cooked rice, spread it out on a tray and let it cool down in the refrigerator for at least 30 minutes. Cold rice works best for fried rice as it is less sticky.
- Marinate the Beef:
- In a small bowl, mix thinly sliced beef with 1 tablespoon of soy sauce and a pinch of pepper. Let it marinate while you prepare the other ingredients.
- Cook the Eggs:
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble them until they are cooked through. Remove the scrambled eggs from the pan and set aside.
- Stir-fry the Vegetables:
- In the same pan, add another tablespoon of oil. Sauté the chopped onion and minced garlic until fragrant, about 1-2 minutes.
- Add the diced bell pepper and mixed vegetables. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
- Cook the Beef:
- Push the vegetables to the side of the pan and add the marinated beef. Stir-fry until the beef is cooked through, about 2-3 minutes.
- Combine Everything:
- Add the chilled cooked rice to the pan. Break up any clumps of rice and stir-fry with the vegetables and beef.
- Season the Fried Rice:
- Drizzle the remaining soy sauce, oyster sauce, and fish sauce (if using) over the rice. Sprinkle with sugar, salt, and pepper to taste. Mix everything well so that the sauce coats the rice evenly.
- Add the Eggs:
- Return the scrambled eggs to the pan. Gently fold them into the rice mixture until evenly distributed.
- Final Touch:
- Continue stir-frying for another 2-3 minutes until everything is heated through and well combined. Taste and adjust seasoning if needed.
- Serve Hot:
- Transfer the beef fried rice to serving plates or bowls. Garnish with chopped green onions or cilantro if desired. Enjoy your delicious homemade beef fried rice!
