- 200g rice vermicelli noodles
- 200g shrimp, peeled and deveined
- 200g squid, cleaned and sliced into rings
- 200g mussels, cleaned and debearded
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 1 medium onion, sliced
- 1 medium carrot, julienned
- 1 red bell pepper, sliced
- 4 cups seafood or vegetable broth
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions:
- Prepare Rice Noodles:
- Cook rice vermicelli noodles according to package instructions. Drain and set aside.
- Prepare Seafood:
- In a large pot, heat vegetable oil over medium heat. Add minced garlic and julienned ginger, sauté until fragrant.
- Add shrimp, squid, and mussels. Cook until shrimp turns pink, squid is opaque, and mussels open. Remove mussels that do not open.
- Vegetables:
- Push the seafood to the side of the pot and add sliced onions, julienned carrots, and sliced red bell pepper. Sauté until vegetables are slightly tender.
- Broth:
- Pour in seafood or vegetable broth. Bring to a simmer.
- Seasoning:
- Season the broth with fish sauce, soy sauce, oyster sauce, sugar, salt, and pepper. Adjust the seasoning according to your taste.
- Combine Noodles and Soup:
- Add the cooked rice vermicelli noodles to the pot. Stir to combine and let it simmer for a couple of minutes.
- Serve:
