Shrimp and Pork Noodle Soup

Ingredients

  • 200g shrimp, peeled and deveined
  • 150g pork loin, thinly sliced
  • 200g rice noodles, soaked in warm water until soft
  • 4 cups chicken or pork broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Bean sprouts, herbs (mint, cilantro), lime wedges for serving

Instructions

  1. In a pot, heat some oil and sauté the chopped onion and minced garlic until fragrant.
  2. Add the sliced pork and cook until they start to turn white. Then, add the shrimp and cook until they turn pink.
  3. Pour in the chicken or pork broth and bring to a simmer. Skim off any impurities that rise to the surface.
  4. Season the broth with fish sauce, sugar, salt, and pepper. Adjust the seasoning to your taste.
  5. To serve, divide the soaked rice noodles into bowls. Ladle the hot broth over the noodles, making sure to cover them completely.
  6. Arrange some bean sprouts on top of the noodles, followed by a few sprigs of mint and cilantro.
  7. Squeeze some lime juice over the soup for a tangy kick.
