- 2 cups cooked jasmine rice (preferably cold, leftover rice)
- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- Cooking oil for frying
Instructions:
- Prepare the Ingredients:
- Ensure the rice is cooked and cooled. If possible, use leftover rice from the previous day.
- Peel and devein the shrimp.
- Chop the green onions and mince the garlic.
- Cook the Shrimp:
- Heat a large skillet or wok over medium-high heat.
- Add a small amount of oil to the pan.
- Stir-fry the shrimp until they turn pink and opaque. Remove them from the pan and set aside.
- Scramble the Eggs:
- In the same pan, add a bit more oil if needed.
- Pour in the beaten eggs and scramble them until just cooked. Remove from the pan and set aside.
- Stir-Fry Vegetables:
- Add a bit more oil to the pan.
- Stir-fry the minced garlic until fragrant.
- Add the mixed vegetables and cook until they are tender.
- Combine Ingredients:
- Add the cold, cooked rice to the pan, breaking up any clumps.
- Pour in the soy sauce, oyster sauce, and sesame oil. Stir to combine.
- Add the cooked shrimp and scrambled eggs back to the pan.
- Season and Finish:
- Season the fried rice with white pepper and toss everything together.
- Add the chopped green onions and continue to stir-fry for a couple of minutes.
- Taste and adjust the seasoning if needed.
- Serve:
- Once everything is well combined and heated through, remove from heat.
- Serve the delicious Fried Rice with Shrimp hot, garnished with additional green onions if desired.
