Fried rice with shrimp

Ingredients:

  • 2 cups of cooked rice (preferably cooled)
  • 200g shrimp, peeled and deveined
  • 2 eggs, beaten
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Spring onions, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the Ingredients:
    • Cook the rice ahead of time and let it cool. You can use leftover rice from the previous day, as it tends to fry better.
    • Peel and devein the shrimp. If they are large, you can cut them into smaller pieces.
    • Beat the eggs in a small bowl and set aside.
    • Mince the garlic, finely chop the onion, and prepare the mixed vegetables.
  2. Stir-Fry the Shrimp:
    • Heat the vegetable oil in a large skillet or wok over medium-high heat.
    • Add the minced garlic and chopped onion to the skillet. Stir-fry for about 1-2 minutes until fragrant and the onion becomes translucent.
    • Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Cook the Eggs:
    • In the same skillet, pour the beaten eggs. Let them cook without stirring for a minute or until they start to set.
    • Using a spatula, scramble the eggs until they are fully cooked but still moist. Remove them from the skillet and set aside with the shrimp.
  4. Stir-Fry the Rice:
    • Add a little more oil to the skillet if needed. Add the cooked rice to the skillet, breaking up any clumps with a spatula.
    • Stir-fry the rice for 3-4 minutes until it starts to turn golden brown and slightly crispy.
  5. Combine Everything:
    • Return the cooked shrimp and eggs to the skillet with the rice.
    • Add the mixed vegetables to the skillet and stir-fry everything together for another 2-3 minutes until the vegetables are tender.
  6. Season the Fried Rice:
    • Drizzle the soy sauce, oyster sauce, and fish sauce over the rice mixture.
    • Season with salt and pepper to taste. Stir well to combine all the flavors.
  7. Serve:
    • Transfer the fried rice with shrimp to serving plates or bowls.
    • Garnish with chopped spring onions for extra flavor and freshness.
    • Serve hot with lime wedges on the side for squeezing over the rice.
