Ingredients
- 200g shrimp, peeled and deveined
- 150g pork loin, thinly sliced
- 200g rice noodles, soaked in warm water until soft
- 4 cups chicken or pork broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- Salt and pepper to taste
- Bean sprouts, herbs (mint, cilantro), lime wedges for serving
Instructions
- In a pot, heat some oil and sauté the chopped onion and minced garlic until fragrant.
- Add the sliced pork and cook until they start to turn white. Then, add the shrimp and cook until they turn pink.
- Pour in the chicken or pork broth and bring to a simmer. Skim off any impurities that rise to the surface.
- Season the broth with fish sauce, sugar, salt, and pepper. Adjust the seasoning to your taste.
- To serve, divide the soaked rice noodles into bowls. Ladle the hot broth over the noodles, making sure to cover them completely.
- Arrange some bean sprouts on top of the noodles, followed by a few sprigs of mint and cilantro.
- Squeeze some lime juice over the soup for a tangy kick.
