Ingredients:
- 8 rice paper sheets
- 200g firm tofu, pressed and sliced into thin strips
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1 cucumber, julienned
- 1 avocado, sliced
- Fresh mint leaves
- Fresh cilantro leaves
- Rice noodles, cooked and cooled
- Soy sauce or tamari for dipping
Dipping Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1 garlic clove, minced
- Red pepper flakes (optional for spice)
Instructions:
- Prepare Ingredients:
- Press the tofu to remove excess water and slice it into thin strips.
- Shred the lettuce and carrots, julienne the cucumber, slice the avocado, and prepare the rice noodles according to package instructions.
- Soften Rice Paper:
- Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it softens.
- Assemble the Spring Roll:
- Lay the softened rice paper on a clean surface.
- Place a few strips of tofu in the center of the rice paper.
- Add a handful of shredded lettuce, carrots, julienned cucumber, avocado slices, mint leaves, cilantro leaves, and a small portion of rice noodles.
- Rolling:
- Fold the sides of the rice paper over the filling, then tightly roll from the bottom to the top, forming a spring roll.
- Repeat:
- Repeat the process with the remaining ingredients.
- Prepare Dipping Sauce:
- In a small bowl, mix soy sauce, hoisin sauce, rice vinegar, sesame oil, sugar, minced garlic, and red pepper flakes (if using).
- Serve:
- Serve the Tofu Spring Rolls with the dipping sauce on the side.
