Ingredients:
- 2 cups of cooked rice (preferably cooled)
- 200g shrimp, peeled and deveined
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Spring onions, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
- Prepare the Ingredients:
- Cook the rice ahead of time and let it cool. You can use leftover rice from the previous day, as it tends to fry better.
- Peel and devein the shrimp. If they are large, you can cut them into smaller pieces.
- Beat the eggs in a small bowl and set aside.
- Mince the garlic, finely chop the onion, and prepare the mixed vegetables.
- Stir-Fry the Shrimp:
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and chopped onion to the skillet. Stir-fry for about 1-2 minutes until fragrant and the onion becomes translucent.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Cook the Eggs:
- In the same skillet, pour the beaten eggs. Let them cook without stirring for a minute or until they start to set.
- Using a spatula, scramble the eggs until they are fully cooked but still moist. Remove them from the skillet and set aside with the shrimp.
- Stir-Fry the Rice:
- Add a little more oil to the skillet if needed. Add the cooked rice to the skillet, breaking up any clumps with a spatula.
- Stir-fry the rice for 3-4 minutes until it starts to turn golden brown and slightly crispy.
- Combine Everything:
- Return the cooked shrimp and eggs to the skillet with the rice.
- Add the mixed vegetables to the skillet and stir-fry everything together for another 2-3 minutes until the vegetables are tender.
- Season the Fried Rice:
- Drizzle the soy sauce, oyster sauce, and fish sauce over the rice mixture.
- Season with salt and pepper to taste. Stir well to combine all the flavors.
- Serve:
- Transfer the fried rice with shrimp to serving plates or bowls.
- Garnish with chopped spring onions for extra flavor and freshness.
- Serve hot with lime wedges on the side for squeezing over the rice.
