Ingredients:

  • Beef:
    • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • Marinade:
    • 2 tbsp soy sauce
    • 1 tbsp oyster sauce
    • 1 tbsp cornstarch
    • 1 tsp sesame oil
  • Stir-Fry Sauce:
    • 1/4 cup soy sauce
    • 2 tbsp hoisin sauce
    • 1 tbsp rice vinegar
    • 1 tbsp sugar
    • 1/2 cup beef broth or water
    • 1 tsp cornstarch (mixed with 1 tbsp water)
  • Vegetables:
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 medium carrot, thinly sliced
    • 1 cup snap peas or snow peas
    • 1 small onion, sliced
    • 3 cloves garlic, minced
    • 1 tbsp fresh ginger, minced
  • Other:
    • 1/2 cup cashews (lightly toasted if preferred)
    • 2 tbsp vegetable oil (or any neutral oil for stir-frying)
    • 2 green onions, chopped (for garnish)
    • Cooked rice or noodles (for serving)

Instructions:

  1. Marinate the Beef:
    • In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, and sesame oil. Add the sliced beef and mix well to coat. Let it marinate for at least 15 minutes.
  2. Prepare the Stir-Fry Sauce:
    • In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sugar, beef broth, and cornstarch slurry. Set aside.
  3. Stir-Fry the Beef:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated beef in a single layer. Let it sear without moving it for about 1-2 minutes until browned. Stir and cook for another 2-3 minutes until the beef is cooked through. Remove from the pan and set aside.
  4. Cook the Vegetables:
    • In the same skillet, add another tablespoon of vegetable oil.
    • Add the onion, garlic, and ginger. Stir-fry for 1-2 minutes until fragrant.
    • Add the bell peppers, carrot, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are crisp-tender.
  5. Combine and Finish:
    • Return the cooked beef to the skillet with the vegetables.
    • Pour the prepared stir-fry sauce over the beef and vegetables. Stir well to coat everything evenly.
    • Cook for another 2-3 minutes until the sauce thickens and everything is well combined.
    • Stir in the toasted cashews.
  6. Serve:
    • Garnish with chopped green onions.
    • Serve the stir-fry over cooked rice or noodles.
