Ingredients:
- Beef:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
- Marinade:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil
- Stir-Fry Sauce:
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1/2 cup beef broth or water
- 1 tsp cornstarch (mixed with 1 tbsp water)
- Vegetables:
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium carrot, thinly sliced
- 1 cup snap peas or snow peas
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- Other:
- 1/2 cup cashews (lightly toasted if preferred)
- 2 tbsp vegetable oil (or any neutral oil for stir-frying)
- 2 green onions, chopped (for garnish)
- Cooked rice or noodles (for serving)
Instructions:
- Marinate the Beef:
- In a medium bowl, combine the soy sauce, oyster sauce, cornstarch, and sesame oil. Add the sliced beef and mix well to coat. Let it marinate for at least 15 minutes.
- Prepare the Stir-Fry Sauce:
- In a small bowl, mix together the soy sauce, hoisin sauce, rice vinegar, sugar, beef broth, and cornstarch slurry. Set aside.
- Stir-Fry the Beef:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated beef in a single layer. Let it sear without moving it for about 1-2 minutes until browned. Stir and cook for another 2-3 minutes until the beef is cooked through. Remove from the pan and set aside.
- Cook the Vegetables:
- In the same skillet, add another tablespoon of vegetable oil.
- Add the onion, garlic, and ginger. Stir-fry for 1-2 minutes until fragrant.
- Add the bell peppers, carrot, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are crisp-tender.
- Combine and Finish:
- Return the cooked beef to the skillet with the vegetables.
- Pour the prepared stir-fry sauce over the beef and vegetables. Stir well to coat everything evenly.
- Cook for another 2-3 minutes until the sauce thickens and everything is well combined.
- Stir in the toasted cashews.
- Serve:
- Garnish with chopped green onions.
- Serve the stir-fry over cooked rice or noodles.
