Ingredients:
- 1 lb shrimp, peeled and deveined
- 1 cup unsalted cashew nuts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)
- Salt and pepper to taste
- Cooking oil (vegetable or peanut oil)
Instructions:
- Prepare the Shrimp: Pat the shrimp dry with paper towels and season lightly with salt and pepper.
- Toast Cashew Nuts: Heat a dry skillet over medium heat. Add cashew nuts and toast them until lightly golden and fragrant, stirring frequently. Remove from heat and set aside.
- Stir Fry: Heat 1-2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, stir fry for about 30 seconds until fragrant.
- Cook Shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until shrimp turn pink and opaque. Remove shrimp from skillet and set aside.
- Cook Vegetables: In the same skillet, add a little more oil if needed. Add sliced onions and bell peppers. Stir fry for 2-3 minutes until vegetables are slightly tender but still crisp.
- Combine Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, and sesame oil.
- Combine Everything: Return cooked shrimp to the skillet with the vegetables. Pour the sauce over the shrimp and vegetables. Stir everything together until well combined.
- Thicken Sauce (Optional): If you prefer a thicker sauce, add the cornstarch mixture to the skillet. Stir well and cook for another minute until the sauce thickens.
- Add Cashews: Finally, add toasted cashew nuts to the skillet. Toss everything together for another minute to heat through.
- Serve: Remove from heat and serve the Cashew Stir Fry Shrimp immediately over steamed rice or noodles.
Tips:
- Adjust the level of spiciness by adding red pepper flakes or chili sauce.
- For a gluten-free version, use tamari instead of soy sauce and ensure other sauces are gluten-free.
- Feel free to add more vegetables like broccoli, snap peas, or mushrooms to personalize the stir fry.
