Recipe for Delicious Cashew Stir Fry Shrimp

Lemongrass Shrimp

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 cup unsalted cashew nuts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening sauce)
  • Salt and pepper to taste
  • Cooking oil (vegetable or peanut oil)

Instructions:

  1. Prepare the Shrimp: Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Toast Cashew Nuts: Heat a dry skillet over medium heat. Add cashew nuts and toast them until lightly golden and fragrant, stirring frequently. Remove from heat and set aside.
  3. Stir Fry: Heat 1-2 tablespoons of cooking oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, stir fry for about 30 seconds until fragrant.
  4. Cook Shrimp: Add the seasoned shrimp to the skillet in a single layer. Cook for 1-2 minutes per side until shrimp turn pink and opaque. Remove shrimp from skillet and set aside.
  5. Cook Vegetables: In the same skillet, add a little more oil if needed. Add sliced onions and bell peppers. Stir fry for 2-3 minutes until vegetables are slightly tender but still crisp.
  6. Combine Sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, and sesame oil.
  7. Combine Everything: Return cooked shrimp to the skillet with the vegetables. Pour the sauce over the shrimp and vegetables. Stir everything together until well combined.
  8. Thicken Sauce (Optional): If you prefer a thicker sauce, add the cornstarch mixture to the skillet. Stir well and cook for another minute until the sauce thickens.
  9. Add Cashews: Finally, add toasted cashew nuts to the skillet. Toss everything together for another minute to heat through.
  10. Serve: Remove from heat and serve the Cashew Stir Fry Shrimp immediately over steamed rice or noodles.

Tips:

  • Adjust the level of spiciness by adding red pepper flakes or chili sauce.
  • For a gluten-free version, use tamari instead of soy sauce and ensure other sauces are gluten-free.
